Marry Me Chicken Pasta

1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

8 oz (225g) fettuccine or penne pasta

3 tablespoons olive oil, divided

4 garlic cloves, minced (or 2 teaspoons garlic powder for a milder flavor)

1/2 cup sun-dried tomatoes, chopped (oil-packed works best, but rehydrated dry ones also work)

1 cup heavy cream (for a lighter option, see our healthier alternatives below)

1/2 cup chicken broth

1/2 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (adjust to taste)

Fresh basil leaves, chopped for garnish

Salt and freshly ground black pepper to taste


Instructions

Step 1: Cook the Pasta

Bring a large pot of salted water to a boil. Add your pasta of choice and cook according to package directions until al dente. Pro tip: Reserve 1/2 cup of pasta water before draining—this starchy water can help thicken your sauce later if needed.

Step 2: Season and Cook the Chicken

While the pasta cooks, season your chicken pieces generously with salt and pepper. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes until golden brown and cooked through (internal temperature should reach 165°F/74°C). Transfer the chicken to a plate and cover to keep warm.

Step 3: Create the Flavor Base

In the same skillet, add the remaining tablespoon of olive oil over medium heat. Add the minced garlic and cook for 30 seconds until fragrant (careful not to burn it—burned garlic can ruin the dish with bitterness!). Add the sun-dried tomatoes and cook for another minute.

Step 4: Make the Creamy Sauce

Pour in the chicken broth, scraping up any browned bits from the bottom of the pan—these contain incredible flavor! Add the heavy cream, Italian seasoning, and red pepper flakes. Bring to a gentle simmer and cook for 3-4 minutes until slightly thickened.

Step 5: Combine and Finish

Reduce heat to low and stir in the Parmesan cheese until melted and the sauce is smooth. Return the chicken to the skillet and add the drained pasta. Toss everything together until well coated with sauce, adding a splash of reserved pasta water if the sauce seems too thick. Season with additional salt and pepper if needed.

Step 6: Serve and Garnish
