3 tablespoons olive oil

4 garlic cloves, minced (or 2 tablespoons pre-minced garlic)

1 tablespoon fresh thyme leaves (substitute: 1 teaspoon dried)

1 tablespoon fresh parsley, chopped (substitute: 1 teaspoon dried)

1 teaspoon lemon zest

1 tablespoon lemon juice

1 teaspoon salt

½ teaspoon black pepper

For the Caramelized Vegetables:

1 pound carrots, peeled and cut into 2-inch sticks

12 ounces fresh green beans, trimmed

2 tablespoons olive oil

1 tablespoon honey or maple syrup (for carrots)

2 garlic cloves, minced

Salt and pepper to taste


Instructions

Step 1: Prepare the Garlic Herb Marinade

Mix olive oil, minced garlic, rosemary, thyme, parsley, lemon zest, lemon juice, salt, and pepper in a bowl.
